Tasting Note
Soaring aromatics of red, blue and black berries with Asian spice, violet and anise; concentrated yet precise palate with inky black- and red-fruit layers, full mid-palate richness, fine structure, and a lifted floral finish.

Western: roast duck with berry or mushroom sauce, mushroom risotto, herb-roasted pork, grilled salmon, charcuterie and aged Gruyère/Comté. Asian: miso-glazed black cod, char siu pork, shiitake-soy braised short ribs, pork-belly ramen, mushroom soba.

Multi-clonal field blend (multiple clones); harvested Aug 21; small-lot fermentations and aged 15 months in French oak (27% new, Tonnellerie Mercurey & Atelier Centre France).
