Tasting Note
Bright red-fruit core of raspberry and red cherry with rose-petal and thyme florals, then darker cassis, black cherry and woodsy/mossy savory notes. Mineral focus, spicy persistence and a long, penetrating finish.
Food Pairing
Western: roast duck, mushroom risotto, grilled salmon, pork tenderloin. Asian: Peking duck, miso-glazed black cod, teriyaki salmon, Korean bulgogi, shiitake and tofu stir-fry.
Production Method
Hand-harvested, small-lot fermentations from Estate Coffee Lane Vineyard; aged 15 months in French oak (30% new, Tonnelleries Chassin & Mercurey).
