Tasting Note
Dark, savory Pinot: black raspberry, black cherry, cranberry, oregano, dried thyme, forest floor and subtle bergamot tea. Focused, linear palate with bright acidity, mouth-coating tannins and a long, savory finish.
Food Pairing
Western: roast duck, mushroom risotto, pork loin, grilled salmon. Asian: miso-glazed black cod, char siu, Korean bulgogi, shiitake gyoza.
Production Method
Hand-harvested, small-lot fermentations; aged 15 months in 50% new French oak barrels (multiple tonnelleries). Gentle extraction and careful élevage to preserve site expression.
