Tasting Note
Concentrated lemon and lime oil with lemongrass, chamomile, thyme and saline, stony minerality. Intense, nervy acidity, rich mid-palate and a long briny finish with honeyed and herbal accents.
Food Pairing
Western: roast chicken, butter-poached lobster, creamy pasta (fettuccine alfredo), soft goat cheese. Asian: miso-glazed cod, sushi/sashimi, tempura, Thai green curry (milder coconut-based dishes).
Production Method
Barrel-fermented and aged ~12 months (38% new French oak) with subsequent settling in tank; bottled unfiltered from high-density estate plantings.
