Tasting Note

Apricot, white flowers, marzipan and white pepper with flinty/petrichor mineral notes. Oily, citrus-tinged texture, saline/umami undercurrent and bright, crystalline acidity; long, focused, savory finish.

Production Method

Gently whole-cluster pressed, barrel fermented and aged sur lie in French oak (approx. 11–16 months, ~30–40% new); full malolactic conversion with restrained bâtonnage and settling in tank before bottling.
