Tasting Note
Bright citrus, white nectarine and tangerine with oyster-shell, flint and briny freshness. Intense layered palate of citrus oil, sweet apricot, beeswax and almond paste; floral jasmine and lemongrass notes. Broad, viscous texture with grapefruit-ginger acidity and a long saline finish.
Food Pairing
Western: roast chicken, mushroom risotto, seared scallops, lobster, pork belly, hazelnut salad. Asian: miso‑glazed black cod, sushi (salmon/toro), tempura prawns, soy‑ginger glazed chicken, Thai coconut curry.
Production Method
Barrel‑fermented and aged 12 months in 35% new French oak (Tonnellerie ACF), followed by six months settling in tank; finished as a single‑vineyard bottling (Charles Heintz). Likely undergoes malolactic fermentation.
