Tasting Note
Apple, pear and nectarine with saline oyster-shell, clove and green-herb notes; waves of grapefruit pith and lime zest, oily texture and a long, mouthwatering finish.

Seared scallops with lemon butter, roast chicken with herb butter, lobster or creamy pasta; Asian: miso-glazed cod, sushi or sashimi, tempura prawns, gently spiced Thai fish curry.

Production Method
Aged 11 months in 38% new French oak barrels (Tonnellerie Chassin), then six months settling in tank; small-lot, minimal-intervention élevage.
