Tasting Note
Ripe peach, apricot, tangerine and lemon curd with honeyed, oatmeal and anise notes; silky texture, ginger-white pepper spice and a long, vibrant finish.
Food Pairing
Western: roasted chicken with herb butter, lobster or scallops in a lemon-butter sauce, creamy pasta, roasted root vegetables. Asian: miso-glazed black cod, seared scallops with soy-ginger glaze, richer sushi (toro), mild Thai coconut curry.
Production Method
Hand-harvested, fermented and aged 11 months in French oak (30% new), followed by 6 months settling in tank; small-lot, vineyard-designate blending.
