Tasting Note
Bright tangerine and orange oil with honey, flint and oyster-shell notes. Palate shows peach, nectarine, candied ginger and oily texture balanced by vibrant citrus acidity, long focused finish and saline detail.
Food Pairing
Roast chicken, butter-poached lobster, mushroom risotto, pork belly; Asian: miso-glazed black cod, tempura prawns, crab or salmon nigiri, shiitake dumplings.
Production Method
Early harvested vineyard selection; fermented and aged in French oak (11 months, 35% new Damy barrels) then settled 6 months in tank; blended from multiple blocks.
