Tasting Note
Broad, oily texture with aromas of Asian pear, chamomile, clove and peach skin; flavors of white peach, nectarine, honeyed citrus and flint, brightened by vibrant acidity and a long, saline-tinged finish.
Food Pairing
Western: roast chicken with herbs, butter-poached lobster, creamy mushroom risotto, pork with lemon-butter sauce. Asian: miso-glazed black cod, tempura prawns, Hainanese chicken rice, sushi (oily fish) and soy-butter scallops.
Production Method
Barrel fermented; aged 11 months in 35% new French oak (Tonnellerie Damy), followed by six months settling in tank; minimal intervention to preserve vineyard character.
