Tasting Note

Ripe black fruits (cassis, plum) and dark cherry with floral lift, cedar, graphite and tobacco. Velvety texture, integrated oak, fine firm tannins and a long saline, incense-tinged finish.

Western: roast lamb, beef tenderloin, duck confit, grilled ribeye, hard cheeses (Comté, aged cheddar). Asian: Peking duck, char siu (Cantonese BBQ pork), Korean bulgogi, Sichuan pepper beef, miso-glazed aubergine.


Production Method

Hand-harvested, fermented in temperature-controlled vats with malolactic conversion; aged ~14–18 months in oak (≈50% new), including foudres; strict selection with significant volume to second wine.
