Tasting Note
Red-fruited Pinot with black cherry, poached plum, forest floor and subtle liquorice. Silky mid-palate, polished texture and a slightly austere, mildly drying finish; earthy and savoury notes emerge with age.

Western: roast rabbit with mushrooms, lamb, beef fondue, Epoisses or other soft cheeses. Asian: Peking duck, hoisin- or soy-glazed pork, miso-glazed aubergine, teriyaki chicken, mushroom-based ramen.
Production Method
Hand-harvested Pinot Noir; gentle destemming and soft extraction (light punch-downs, moderate pump-overs). Aged in one-wine Allier/Nivernais oak barrels (medium to medium-plus toast) for ~12–18 months.

Domaine Drouhin-Laroze, family estate since 1850 (11.5 ha). Six generations manage hillside vineyards in Gevrey-Chambertin; plot 'En Champs' planted 1959 (~0.3 ha).
