Tasting Note
Aromas of red cherry, raspberry and violet. Lively, morello-driven palate with a silky mid-palate, discreet oak spice, elegant tannins and a long, mineral finish.

Food Pairing
Western: roast duck, lamb, beef tenderloin, mushroom risotto, foie gras bruschetta with fig jam. Asian: Peking or Cantonese roast duck, mushroom and soy stir-fries, braised pork (char siu), grilled miso aubergine.

Production Method
Hand-harvested Pinot Noir; gentle extraction and early malolactic fermentation; aged in 40% new oak (Allier/Nivernais) with light–medium-plus toast.
