Tasting Note
Intense red/black cherry, raspberry and plum with violet, black pepper, wild herbs and truffle notes. Mineral core, creamy oak, fine-grained firm tannins and a long, spicy, savory finish.

Food Pairing
Western: grilled ribeye or porterhouse with pepper sauce, roast lamb, mushroom & truffle risotto. Asian: Peking duck, char siu, beef bulgogi or Korean BBQ, shiitake mushroom hotpot and rich soy-based braises.

Production Method
Fully destemmed, traditional Pinot vinification, fermented then aged ~16–18 months in French oak (c.80% new) with careful maturation before bottling.
