Tasting Note

Perfumed and intense: blackberry, morello cherry, cassis, crushed violet, spice and a hint of liquorice; with bottle age show truffle and musk. Silky texture, fine-grained tannins and a long, satin finish.

Western: roast duck (foie-gras stuffed), roast Bresse chicken, venison or beef with mustard, mushroom risotto. Asian: Peking duck, char siu (barbecue pork), miso-glazed aubergine, shiitake hot-pot or mushroom-based dishes.


Production Method

Hand-harvested; circa 30% whole-cluster fermentation, indigenous yeasts, 2–3 week maceration in small open vats; aged 16–20 months in ~80% new French oak.
