Tasting Note

Powerful, mineral-driven Chablis with bright citrus, green orchard fruit, white-peach and apricot, oyster-shell salinity and a chalky, racy backbone. Youthful austerity with concentrated mid-palate and long, saline finish.

Western: lobster, oysters, grilled white fish, roasted chicken in cream sauce, Comté or aged cheeses. Asian: sushi/sashimi, tempura prawns, Chinese steamed fish with ginger & scallions, Thai steamed fish with lime and herbs.


Production Method

Hand-harvested; pneumatic pressing, enzymatic settling (12–24h); fermentation with indigenous yeasts in stainless steel and French oak; malolactic fermentation; 8–10 months aging, light fining and filtration.
