Tasting Note
Powerful, mineral-driven Chablis: oyster-shell and saline notes with lemon curd, orange pith, yellow stone fruit (peach, apricot), subtle honey and light spice; precise, broad-shouldered palate and very long saline finish.

Western: oysters, lobster, grilled scallops, roast chicken with cream sauce, mature cheeses (Comté). Asian: sushi/sashimi, tempura prawns, steamed crab, Cantonese white‑sauce chicken, mild Thai fish dishes.
Production Method
Pneumatic pressing, indigenous yeast fermentation partly in stainless steel and partly in barrel, systematic malolactic fermentation, 8–10 months élevage, light fining and filtration before bottling.
