Bright lemon and white-peach fruit with floral and saline sea-air notes, citrus zest, wet-stone minerality and subtle oak spice. Vibrant acidity, medium-full body and a long, focused finish with honeyed depth.
Food Pairing
Western: oysters, raw shellfish, grilled or poached fish, lobster, creamy poultry, goat or fresh cheeses. Asian: sushi and sashimi, tempura, steamed fish, Chinese dim sum, light Thai or Vietnamese seafood dishes.
Production Method
Hand-harvested; pneumatic pressing and enzymatic settling; fermentation with indigenous yeasts partly in stainless steel and partly in oak; systematic malolactic fermentation; élevage ~8–10 months in tank and neutral/used French oak.
Vineyard Info
