Tasting Note
Bright lemon and green apple with white flowers, sea-air flint and oyster-shell salinity. Medium–full palate with stone-fruit richness, taut racy acidity and a long, saline finish.

Hand-harvested; pneumatic pressing; enzymatic settling 12–24h; indigenous yeast fermentation partly in stainless steel and partly in barrels; systematic malolactic fermentation; 8–10 months on lees with ~20% neutral French oak.
