Blackcurrant, black cherry and cassis with petrichor, iron, bay leaf, tobacco and candied orange peel. Medium‑full body, bright acidity, fine‑grained ripe tannins, savory minerality and a long, vibrant finish.

Western: grilled ribeye, roast lamb, braised short ribs, mushroom risotto, aged cheddar and blue cheese. Asian: Korean BBQ/galbi, Chinese char siu, Peking duck, Sichuan beef, beef rendang.

Production Method
Hand‑harvested fruit; gentle pumping‑over and low‑pressure vertical pressing; fermentation with minimal intervention; aged ~16 months in French oak barrels (20% new); barrel‑to‑barrel racking.
