Tasting Note
Concentrated dark-fruited core of blackcurrant and plum with tobacco, cedar, licorice, dark chocolate and savory earth. Silky, ripe tannins, bright acidity and a long, mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, mushroom risotto, aged cheddar. Asian: Peking duck, Korean BBQ (galbi), braised beef short ribs, spicy Sichuan or char siu pork.

Production Method
Dry-farmed estate fruit; hand-sorted, separate lot fermentations with gentle extraction; matured in French oak barrels (approx. 40% new) for ~18 months.
