Tasting Note
Aromas of white flowers, citrus, green apple, apricot and lemongrass. Medium–full, waxy texture with bright acidity, saline minerality and a persistent, lightly spiced finish.

Food Pairing
Western: roast chicken, lobster with beurre blanc, scallops, creamy mushroom risotto, rich fish in butter sauce, soft cheeses (Brie). Asian: miso‑glazed black cod, Cantonese steamed fish, tempura prawns, sushi (salmon/toro), steamed dumplings.

Production Method
Hand‑harvested Chardonnay; gentle pneumatic pressing, fermentation in French oak and stainless, about 20% new oak; extended lees contact and 12–18 months élevage before bottling.
