Tasting Note

Pear, white peach, citrus zest, beeswax, toasted nuts and wet stone; linear, saline minerality with chalky grip, medium–full body and a long, refined finish.


Food Pairing

Western: roasted chicken with mushroom cream sauce, lobster with beurre blanc, seared scallops, mushroom risotto, aged Comté. Asian: miso‑glazed black cod, tempura prawns, sushi/uni, steamed fish with ginger & scallions, Cantonese roast chicken.


Production Method

Pneumatic/whole‑cluster pressing, fermentation with indigenous yeasts in large barrels, ~11–12 months sur‑lie with ~15% new French oak, occasional bâtonnage and finishing rest in stainless before bottling.
