Tasting Note

Lemon-citrus, white peach, orange pith, frangipane and grilled-walnut notes with saline minerality, fine acidity and an elegant, persistent finish—taut, refined and medium-to-full bodied.

Western: roasted lobster, scallops, grilled salmon, roast chicken with butter sauce, creamy pasta, mild cheeses. Asian: miso‑glazed cod, tempura, sushi/sashimi (fatty tuna), Cantonese steamed fish, light Chinese poultry dishes.


Production Method

Hand-harvested Chardonnay; fermented and aged with restrained new French oak and reductive élevage on lees (approx. 11–12 months), light malo/lees management to preserve freshness.
