Tasting Note
Amber, aromatic with notes of dried apricot, almond, marzipan, old oak, musk and raisin; warming alcohol, round mid-palate and long, persistent, slightly nutty finish.

Food Pairing
Western: foie gras, blue cheese, dark chocolate, tarte tatin, roasted duck. Asian: Peking duck, mooncakes or Chinese almond cookies, miso-glazed fish, Japanese wagashi (yokan).

Production Method
Distilled from Burgundy wine/marc in a copper alembic; extended oak ageing (Hors d'Âge) in small batches using the family still.
