Tasting Note
Bright black-fruit (blackberry, blackcurrant), violet, cracked pepper, garrigue and black olive; medium-bodied with fresh acidity, fine chalky tannins and a savory, mineral finish.

Food Pairing
Western: roasted lamb, grilled beef, charcuterie, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean bulgogi, Sichuan pepper beef, grilled teriyaki dishes.

Production Method
Hand-harvested Syrah from granite slopes; organic/biodynamic viticulture, fermented with indigenous yeasts and vinified with minimal or no added sulfur; short élevage in neutral vessels or older French oak.
