Tasting Note
Bright red cherry and raspberry with thyme/rosemary and subtle huacatay, clove, moss and oyster-shell minerality. Medium-high acidity, low alcohol, grainy tannins and integrated French oak; precise, long finish.
Food Pairing
Western: roast chicken, duck breast, mushroom risotto, ravioli with tomato sauce, polenta with peperonata. Asian: bibimbap, miso-glazed salmon, shiitake stir-fry, bulgogi (Korean BBQ).
Production Method
Hand-harvested; Dijon clones 115 & 777; indigenous yeasts; 20–50% whole-cluster fermentation (clone-dependent); small-vat and oak roll fermentors; 7–10 day maceration; malolactic in barrel; aged 12–18 months in French oak (c.15–20% new).
