Tasting Note
Pale yellow Chardonnay with acacia and white-flower aromas, citrus and exotic fruit, bright mineral core with saline, chalky notes, hints of raw cream and brioche; finishes with white pepper and persistent citrus-driven freshness.

Food Pairing
Western: pan-seared scallops, grilled trout, roast chicken, goat cheese, smoked salmon. Asian: salmon sashimi, sushi, tempura prawns, miso-glazed cod, Thai fish cakes.

Production Method
Hand-harvested 100% Chardonnay; gentle whole-berry pressing; native-yeast fermentation; aged 12 months in French oak (25% new); no bâtonnage; gravity racked.

Vineyard Info
Domaine MIA (~18 ha across Mercurey and Rully), certified organic by Ecocert since 2019. Family estate dating to 1860; leadership renewed under Mia in 2020.
