Tasting Note
Elegant Pinot Noir showing red and black cherry, cranberry, pomegranate, subtle spice and sandalwood, with pronounced minerality, silky tannins and a fresh, long finish. Medium-bodied and refined.
Food Pairing
Western: roast lamb, duck breast, mushroom risotto, charcuterie, soft-ripened cheeses. Asian: Peking duck, teriyaki salmon, miso-glazed aubergine, char siu, bulgogi-style beef.
Production Method
Hand-harvested; ~40% whole clusters; indigenous yeast fermentation 13–14 days with manual punchdowns and pump-overs; aged 12–13 months in French oak (25% new). Organic farming; converting to biodynamics.

Monopole Clos La Marche (3.48 ha) with south‑east exposure on a limestone slab over marl; ~2 ha of ~60‑year‑old vines and 1.5 ha replanted. Estate managed by Mia Subotic, certified organic and in conversion to biodynamics.
