Tasting Note
Crisp, mineral and saline with gunflint/pebble notes, citrus (lemon, grapefruit) and white orchard fruit; crystalline, mid-bodied, with bright acidity and a long iodine-tinged finish.

Production Method
Biodynamic viticulture (Demeter), hand-harvested, pneumatic pressing, indigenous yeast fermentations; élevage on lees in subterranean concrete vats with minimal intervention (no pumps).

Domaine de l'Ecu: organic since 1975 and Demeter-certified since 1998; 'Granite' comes from older (~50yo) vines on a 3ha granite plot in the Pays Nantais.
