Tasting Note
Ripe black and red fruits (blackberry, plum, cherry), garrigue herbs, pepper and licorice, warm, concentrated tannins and a medium‑long savory finish.

Western: roast lamb, grilled ribeye, cassoulet, aged hard cheeses. Asian: Korean BBQ (bulgogi), Chinese red-braised beef/pork, Sichuan-style spicy dishes, yakitori/teriyaki grilled meats.

Production Method
Hand-harvested, 100% destemmed; extraction by pigeage, maceration 2–4 weeks; short ageing mainly in vats. Produced on steep schist/gneiss terraces with biodynamic/organic practices at the estate.
