Tasting Note
Black and red cherry, boysenberry and violet with white pepper and graphite notes; silky, medium-bodied, fresh acidity and polished tannins, mineral, lingering finish.

Western: roast duck, duck confit, roast lamb, mushroom risotto, pork loin, charcuterie and soft cheeses. Asian: Peking duck, miso-glazed salmon, soy-ginger pork belly, mushroom stir-fry, char siu with steamed buns.

Production Method
Certified biodynamic farming; ploughed by horse, indigenous yeast fermentation, partial destemming, aged in French oak (small % new, ~15%), minimal SO2; bottled unfined and unfiltered.
