Tasting Note
Mid ruby; wild cherry, raspberry and violet with subtle black-fruit, forest floor and stony minerality. Silky texture, bright acidity, restrained spice and a focused, saline finish.

Food Pairing
Western: roast duck, coq au vin, mushroom risotto, pork tenderloin, grilled salmon. Asian: Peking duck, char siu/pork-belly bao, miso-glazed salmon, teriyaki chicken, soy-braised mushrooms or ramen with pork broth.

Hand-harvested; biodynamic viticulture; partially destemmed, native-yeast fermentation; 14–16 months in French oak (low % new wood); minimal intervention; bottled mostly unfined/unfiltered.
