Tasting Note
Deep black-fruit core of blackcurrant, blackberry and black cherry with savory leather, tobacco, cedar and a touch of cocoa. High acidity, firm chalky tannins and a long, spicy finish.

Western: grilled ribeye, roast lamb, beef stew, mushroom risotto, aged cheddar. Asian: Korean BBQ (bulgogi), char siu, beef rendang, miso‑glazed aubergine, Sichuan pepper beef.

Production Method
Hand‑harvested, small-batch open‑vat fermentation with regular plunging; matured ~18–24 months in seasoned French oak; bottled unfined and unfiltered.
