Tasting Note

Pale straw with grapefruit, lemon and honeysuckle, layered with lavender and spicy vanilla oak; bright acid, creamy mid‑palate and a long, subtle oak-tinged finish.

Western: oysters, scallops, roasted chicken, goat cheese, creamy seafood pasta. Asian: sashimi/sushi, tempura prawns, Vietnamese spring rolls, Thai lemongrass chicken, Chinese steamed fish with ginger and scallion.


Production Method

Hand-harvested from Stoney Vineyard; fermented in 100% new French oak barriques, matured ~12 months on fine lees, bottled unfined/unfiltered and cellared before release.
