Tasting Note
Intense blackcurrant and dark cherry with cedar, tobacco, dark chocolate and spice; fine-grained tannins, velvety texture and a long, elegant finish.

Food Pairing
Western: grilled ribeye, roast lamb, cassoulet, aged cheddar. Asian: char siu, Peking duck, Korean BBQ (bulgogi), spicy Sichuan beef.

Production Method
Open-vat fermentation with hand plunging and extended lees contact; matured ~2–3 years in 100% new French oak barriques; bottled unfined and unfiltered.
