Tasting Note
Concentrated red fruits (cherry, raspberry, plum) with earth, truffle, smoked meat, cedar and spice; firm, ripe tannins, bright acidity and a long mineral finish showing power and elegance with age.

Western: roast duck, beef bourguignon, lamb, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu, Korean BBQ short ribs, miso‑glazed black cod, shiitake and soy braised dishes.
Production Method
Hand‑harvested grapes from biodynamic vineyards; open‑top fermentation with 30–50% whole clusters and indigenous yeasts, long maceration; aged ~18–20 months in 35–50% new French oak.
