Tasting Note
Dark ruby; expressive aromas of cocoa, pomegranate, clove and star anise. Palate shows cherry, cranberry and blueberry with plush, polished tannins and bright acidity, finishing long with spice and mocha notes.
Food Pairing
Western: roast duck, grilled salmon, mushroom risotto, herb-roasted chicken, pork tenderloin. Asian: miso-glazed cod, teriyaki salmon, Peking duck, char siu pork, mushroom ramen.
Production Method
Blended from five estate vineyards; fermented and aged 15 months in French oak (45% new). Harvested 9/19–9/29/2015; bottled March 2017.
