Tasting Note
Bright cherry and raspberry with savoury forest-floor and spice notes; subtle smoky oak, supple tannins, fresh acidity and a medium-length, mineral finish.

Western: roast duck, mushroom risotto, roast pork, charcuterie and aged cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed fish, stir-fried shiitake/mushroom dishes, yakitori.
Production Method
Hand-harvested Pinot Noir; ~70% destemmed; cool ~10-day maceration, fermented partly in oak (c.50% new) and aged 16–18 months; lightly clarified, typically unfiltered.
