Tasting Note
Bright red cherry and plum with black-berry undertones, forest-floor/mushroom earthiness, gentle spice and vanilla from oak, supple tannins and balanced acidity leading to a savory, medium-length finish.

Food Pairing
Western: roast duck, coq au vin, beef bourguignon, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, teriyaki salmon, mushroom hot pot, soy‑glazed pork belly.

Production Method
Hand-harvested Pinot Noir with partial destemming, native-yeast fermentation and cool maceration; aged 12–16 months in about 50% new French oak. Bottled unfined and unfiltered; low-yield traditional Burgundian approach.
