Tasting Note
Perfumed coral-rose: wild raspberry, red cherry, blood orange, rose petal, toasted brioche, spice and saline minerality. Full, silky palate with vibrant acidity, creamy mousse and a long, penetrating finish.

Western: fine red meats, roast duck, lobster, foie gras, smoked salmon, charcuterie. Asian: sushi and sashimi, tempura, grilled octopus, miso-glazed fish, Peking duck, Korean BBQ, spicy Thai prawns.

Production Method
Méthode traditionnelle (Champenoise); vintage 2008 blend (≈55% Pinot Noir, 45% Chardonnay) with ~10% still Pinot Noir red wine. Malolactic fermentation undergone; aged on lees >12 years before release.
