Tasting Note
Mineral-driven, precise Chardonnay with lemon, green apple, white flowers and flint; creamy mid-palate, bright acidity and a long, stony, subtly vanilla-tinged finish.

Western: lobster, scallops, roasted or poached white fish, roast chicken with cream sauce, creamy pasta. Asian: miso-glazed cod, steamed fish with ginger & scallions, Cantonese steamed crab, delicate sushi/sashimi.

Production Method
Biodynamic viticulture; manual harvest, pneumatic pressing; fermentation in oak (≈22% new) with ~12 months barrel aging then additional tank maturation before bottling.
