Food Pairing
Western: oysters, scallops, lobster, crab, sole meunière, roasted chicken. Asian: sushi/sashimi, tempura, miso-glazed fish, steamed Cantonese fish.
Production Method
Hand-harvested Chardonnay; gentle whole-bunch pressing, controlled fermentation with partial malolactic; aged 15–16 months on fine lees in French oak (mostly used barrels), minimal filtration.
