Crisp citrus and green apple with stone-fruit notes, pronounced saline/kimmeridgian minerality, subtle toasted almond and lees complexity; focused, racy acidity and a long, chalky finish.
Food Pairing
Western: oysters, scallops, grilled white fish, roast chicken with lemon cream, soft cheeses (Chèvre, Brie). Asian: sushi/sashimi, steamed fish with ginger & scallion, light miso dishes, delicate Thai seafood preparations.
Production Method
Hand-harvested; gentle low-pressure pressing; fermentation in French oak barrels and stainless steel with malolactic fermentation on some parcels; aged on fine lees ~12 months (combination of barrel and tank).
Vineyard Info
Domaine Laroche (based in the Obédiencerie) owns extensive Chablis holdings including Les Vaillons; vines for this cuvée are old (c. 60+ years) on Kimmeridgian limestone soils, producing concentrated Premier Cru fruit.
