Tasting Note
Fresh, fruit-forward Aligoté: golden color, very aromatic with white fruit and citrus, delicate texture and lively, agreeably acidulous finish. Light-bodied and crisp, drinkable young.

Western: aperitif, seafood, grilled fish, summer salads, goat/soft cheeses. Asian: sushi/sashimi, Thai fish salads, Vietnamese spring rolls, mild curries and other light, aromatic dishes.
Production Method
Hand-harvested 2018 fruit; alcoholic fermentation with indigenous yeasts, followed by thermo‑regulated malolactic fermentation in stainless steel; aged ~8 months in inox; bottled 18 March 2019.

Domaine de la Jobeline (est. 2014) in Verzé, Mâconnais. ~11–12 ha (mostly Chardonnay) with some Aligoté, including old vines planted in 1957; moving toward organic/biodynamic practices.
