Tasting Note

Citrus and white-flower aromas with beeswax, lime and saline minerality. Medium-full bodied, satiny texture, racy acidity and a long spicy, mineral finish.

Western: lobster, grilled sea bass, roasted chicken with herbs, creamy pasta, aged Comté. Asian: sushi/sashimi, miso-glazed cod, Vietnamese spring rolls, Thai lemongrass fish, light Chinese seafood dim sum.

Hand-harvested; cold-settled, barrel-fermented and aged on lees in French oak (partial new oak); traditional vinification with careful oak integration.
