Tasting Note

Concentrated citrus and stone-fruit: lemon, grapefruit, quince with floral honeysuckle, wet stone and subtle toasted oak. Creamy mid-palate from lees, crisp acidity and a long mineral, saline finish.


Food Pairing

Western: lobster with butter, seared scallops, roasted chicken with cream sauce, goat cheese, creamy seafood risotto. Asian: miso-glazed cod, prawn tempura, sushi/sashimi (fatty tuna), Cantonese steamed fish, mild Thai green curry.


Production Method

Hand-harvested; fermentation in French oak (c.35% new) with 18 months ageing on lees and regular bâtonnage; partial malolactic suppression and reductive handling for freshness.

Domaine de Chevalier is a Grand Cru Classé de Graves in Léognan, owned by the Bernard family. Small white holding (c.7 ha), long-established reputation for serious dry Bordeaux whites.
