Tasting Note

Lively citrus and green apple with quince, orange blossom, beeswax and stony flint. Saline, white-pepper spice, bright acidity and a concentrated, creamy mid-palate leading to a long, precise mineral finish.

Western: oysters, scallops, lobster, grilled/roasted white fish, roast chicken, creamy pasta, goat cheese. Asian: sushi/sashimi, steamed crab, light Thai green curry, Cantonese dim sum, sashimi-style seafood.


Production Method

Hand-harvested fruit; fermented in French oak barrels (part new) with élevage on fine lees and periodic bâtonnage; blended and bottled after oak maturation.
