Tasting Note

Concentrated citrus and stone fruit (grapefruit, lemon) with beeswax, jasmine and toasted brioche, pronounced minerality and a long, saline finish. Intense and complex, showing honeyed and herbal notes with persistent acidity.

Western: roasted chicken, grilled lobster, oyster, creamy seafood pasta, foie gras. Asian: sashimi/sushi, ginger-steamed prawns, Thai lemongrass seafood, mild Chinese roasted duck.


Production Method

Hand-harvested; alcoholic fermentation and aging in oak barrels (about 18 months, ~1/3 new) with regular lees stirring.

Domaine de Chevalier, a Grand Cru Classé de Graves, owned by the Bernard family since 1983; about 5–7 ha of white vines on gravel-clay soils. Estate pursuing organic/biodynamic practices.
