Tasting Note
Intensely sweet, honeyed botrytis character: candied apricot, orange peel, acacia honey, crème caramel and dried tropical fruit; viscous with bright acidity and a long, sensuous finish.
Food Pairing
Foie gras, blue cheese (Roquefort), crème brûlée; Asian: Peking duck, spiced Chinese/Thai dishes, foie gras with soy-reduction, miso-glazed dishes or dim sum with rich sauces.
Production Method
Late, successive hand-harvests of botrytised grapes; fermentation and aging in barrels, very low yields and tiny production (often bottled in 375ml).
